I just wanted to store this here with all the measurements I need, and thought it might be nice for you guys to see it, because you might want to make it because it tastes glorious!

Penne Pasta in Vodka and Tomato Sauce

Ingredients
350g penne pasta
16oz chopped tomatoes
2.75 fl.oz vodka
2oz fresh basil, chopped
3.5oz tomato puree
1/2 teaspoon Tabasco Pepper Sauce
4oz no-fat sour cream
Optional: Smoked salmon, sliced into bite-size pieces.

Directions:
  1. Cook pasta al dente - try to time it so that the pasta and sauce are ready at the same time. Or at least make sure the pasta is ready first (though you obviously don't want it sitting around for too long.)
  2. Bring chopped tomatoes and vodka to the boil, and then simmer for five minutes.
  3. Add tomato puree, Tabasco and basil - simmer for another five minutes.
  4. Turn the heat off, and then whisk in sour cream.
  5. Mix with the pasta, and serve into pasta bowls.
  6. If you're including the smoked salmon, sprinkle it on top, or alternatively mix it in with the sauce.
  7. Enjoy!
Serves 4.
315 calories per serving, excluding salmon.
